Breakfast Muffin Recipe

My savoury breakfast muffins with bacon and cheese.

Ingredients

  • 250 ml Milk
  • 250 gr Flour
  • Bacon Diced
  • 100 gr Cheese
  • 70 gr Butter
  • 2 Lrg Eggs
  • Salt
  • 2 tsp B/Powder
  • 1/2 tsp Sugar
  • Italian Spices
  • 1 Clove Garlic
  • Strips of bacon rolled for the top of each muffin.

Instructions

  • Add crushed clove of garlic to the melted butter and add the italian spices.
  • In a small mixing bowl scramble the 2 eggs. Add milk and mix in. Add the melted butter mixture and mix well.
  • Mix the dry powder ingredients into a large mixing bowl. Mix well
  • Add the wet mixture to the dry mixture and mix well.
  • Add the diced bacon and the cheese.
  • Scoop into muffin pan
  • Roll the strips of bacon and press into the top of each muffin leaving ½ exposed.
  • Bake in a preheated oven at 200℃ for 20 to 30 minutes depending on the size and depth of your muffin pan. Deeper muffins take longer.
  • Enjoy with tea or coffee in the mornings.
