Instructions
Whisk the eggs and sugar together until the mixture is pale
Add small portions of flour and sugar (alternate) at a time and mix to achieve a smooth and airy batter.
Add the baking powder and lemon zest and store in a refrigerator for 1 hour.
Pre-heat your oven to 200°C
Butter your madeleine baking tray and dust with flour to aid in the removal of the baked madeleines.
Fill each cavity of the baking tray with a spoon of batter.
Bake for 10 minutes at 200°C
Remove and allow to cool on a rack.
Sprinkle with icing sugar prior to serving
