Burnt Basque Cheesecake Recipe

Basque cheesecake is a crustless cheesecake that has a nice burnt surface and a lighter texture than traditional cheesecake.

Equipment

  • `Round cake mould 20cm
  • Baking paper

Ingredients

  • 500 gr Cream Cheese
  • 300 gr Cream
  • 4 lrg Eggs
  • 20 gr Flour
  • 120 gr Sugar (fine powdered)
  • tsp Vanilla essence
  • ½ Juice of half a lemon

  • Line your mold with baking paper. Use a round mold with fairly high sides as the cheesecake will rise quite high and then it will sink again.
  • In a mixing bowl mix the cottage cheese and the sugar. Mix well.
  • Add eggs to the mixture one at a time and mix in well after each egg is added.
  • Add the 1 ½ tsp Vanilla and mix well.
  • Add the flour and mix well.
  • Add the cream and mix well.
  • Add the lemon juice and mix well.
  • Pour the mixture into your mould.
  • Bake in your oven which has been preheated to 240℃ for 35 minutes.
  • Remove and allow to cool for 10 minutes.
  • Remove from the mold and allow to cool to room temperature.
  • Place the cheesecake in the refrigerator overnight.
