Basque cheesecake is a crustless cheesecake that has a nice burnt surface and a lighter texture than traditional cheesecake.

Equipment
- `Round cake mould 20cm
- Baking paper
Ingredients
- 500 gr Cream Cheese
- 300 gr Cream
- 4 lrg Eggs
- 20 gr Flour
- 120 gr Sugar (fine powdered)
- 1½ tsp Vanilla essence
- ½ Juice of half a lemon

- Line your mold with baking paper. Use a round mold with fairly high sides as the cheesecake will rise quite high and then it will sink again.
- In a mixing bowl mix the cottage cheese and the sugar. Mix well.
- Add eggs to the mixture one at a time and mix in well after each egg is added.
- Add the 1 ½ tsp Vanilla and mix well.
- Add the flour and mix well.
- Add the cream and mix well.
- Add the lemon juice and mix well.
- Pour the mixture into your mould.
- Bake in your oven which has been preheated to 240℃ for 35 minutes.
- Remove and allow to cool for 10 minutes.
- Remove from the mold and allow to cool to room temperature.
- Place the cheesecake in the refrigerator overnight.
