Of course, with this salad you are free to add any other ingredients that you have available that may sound appealing to you. Throw in some feta cheese, perhaps some corn or beans. There is no limit.

Wholesome Country Salad
Equipment
- 1 Mixing bowl
Ingredients
- 3 to 4 Large Hard boiled eggs
- ½ Med Cucumber (to your preference)
- 3 Scallion Spring Onions
- 2 Tbsp Mayonnaise
- Salt and pepper to taste

Instructions
- Allow boiled eggs to cool to room temperature
- Chop the 3 scallions of spring onions fairly fine. If spring onion is not available then use normal onions or something similar.
- Cube the cucumber – add as much or as little as you like.
- Peel the eggs and chop into small cubes.
- Combine ll the ingredients into a suitable salad bowl and mix together. Season lightly with some salt and a touch of pepper to your taste.
- Add the mayonnaise and mix well till all ingredients have a light coating of the mayonnaise.
- Serve on toast or as a side dish.
