Apple Carrot Muffins Recipe

Refreshing small muffins with a distinct fresh fruity taste. This can be mixed by hand.

Ingredients

  • 300 gr Flour (10.6 ounces)
  • 200 ml Buttermilk (6.8 fluid ounces)
  • 60 ml Vegetable oil (2 fluid ounces)
  • 1 lrg Egg
  • 1 tsp Vanilla essence
  • 80 gr Sugar (2.8 ounces)
  • 1 ½ tsp Baking Powder
  • 2 each Apples Peeled and cored
  • 1 lrg Carrot
  • 2 tbsp Lemon Juice
  • 2 tbsp Cinnamon sugar (optional)

Instructions

  • Finely grate apple and carrot
  • Add lemon juice to grated apples and carrots and mix - set side
  • In a separate bowl mix flour, baking powder, sugar and salt together
  • In a separate bowl mix buttermilk, egg, vanilla essence and vegetable oil together
  • Add the wet mixture to the flour and mix well
  • Add the grated apples and carrot and mix well
  • Grease your muffin pan and add mixture to the pan
  • Sprinkle the top of each muffin with a little cinnamon sugar (optional)
  • Bake in preheated oven at 200°C (392°F) for 25 minutes

Sprinkling cinnamon sugar on the top is optional but does give the muffin a lovely glazed crispy top and adds to the flavor of the muffin.
