Instructions
Finely grate apple and carrot
Add lemon juice to grated apples and carrots and mix - set side
In a separate bowl mix flour, baking powder, sugar and salt together
In a separate bowl mix buttermilk, egg, vanilla essence and vegetable oil together
Add the wet mixture to the flour and mix well
Add the grated apples and carrot and mix well
Grease your muffin pan and add mixture to the pan
Sprinkle the top of each muffin with a little cinnamon sugar (optional)
Bake in preheated oven at 200°C (392°F) for 25 minutes

Sprinkling cinnamon sugar on the top is optional but does give the muffin a lovely glazed crispy top and adds to the flavor of the muffin.
