Delicious and easy apple carrot muffins recipe. Enjoy these tasy muffins that have a dash of carrots and apples to provide a refreshing flavor.
Apple Carrot Muffins Recipe
Refreshing small muffins with a distinct fresh fruity taste. This can be mixed by hand.
Equipment

- Mixing bowls
Ingredients
- 300 gr Flour (10.6 ounces)
- 200 ml Buttermilk (6.8 fluid ounces)
- 60 ml Vegetable oil (2 fluid ounces)
- 1 lrg Egg
- 1 tsp Vanilla essence
- 80 gr Sugar (2.8 ounces)
- 1 ½ tsp Baking Powder
- 2 each Apples Peeled and cored
- 1 lrg Carrot
- 2 tbsp Lemon Juice
- 2 tbsp Cinnamon sugar (optional)
Instructions
- Finely grate apple and carrot
- Add lemon juice to grated apples and carrots and mix – set side
- In a separate bowl mix flour, baking powder, sugar and salt together
- In a separate bowl mix buttermilk, egg, vanilla essence and vegetable oil together
- Add the wet mixture to the flour and mix well
- Add the grated apples and carrot and mix well
- Grease your muffin pan and add mixture to the pan
- Sprinkle the top of each muffin with a little cinnamon sugar (optional)
- Bake in preheated oven at 200°C (392°F) for 25 minutes

Notes
Sprinkling cinnamon sugar on the top is optional but does give the muffin a lovely glazed crispy top and adds to the flavor of the muffin.
No mixing machine is required for this recipe as you can easily combine all the ingredients and mix by hand.
These refreshing muffins are best enjoyed with a cup of tea or coffee.
