Instructions
Heat a suitable sized frying pan to a medium heat and melt the Ghee
Add the finely chopped onion and fry till translucent
Add the chopped red pepper and chili and fry till the color changes
Add grated tomato (no skins) and allow to cook for approx 5 minutes
Add salt and pepper to taste
Add the eggs one at a time and break the yolk. Lightly mix so that the egg is halfway mixed into the tomato mixture.
Allow to cook till eggs are cooked.
Serve with bread (Bazlama). Bon Appetit
