Ingredients

  • 4 lrg Eggs
  • 1 tbsp Ghee alternatively butter or olive oil
  • 1 med Onion
  • ½ lrg Red Pepper
  • 1 Cayenne chili
  • 4 med Tomatoes
  • 1 Clove Garlic
  • ½ tsp Salt
  • ½ tsp Black Pepper Ground

Instructions

  • Heat a suitable sized frying pan to a medium heat and melt the Ghee
  • Add the finely chopped onion and fry till translucent
  • Add the chopped red pepper and chili and fry till the color changes
  • Add grated tomato (no skins) and allow to cook for approx 5 minutes
  • Add salt and pepper to taste
  • Add the eggs one at a time and break the yolk. Lightly mix so that the egg is halfway mixed into the tomato mixture.
  • Allow to cook till eggs are cooked.
  • Serve with bread (Bazlama). Bon Appetit
