Palmier and Custard Dessert

This lovely palmier and custard dessert is so easy to make and can also be used as an afternoon snack to enjoy with your tea or coffee.

What is a Palmier?

Palmiers also known as pig’s ear, palm leaf cookies, or elephant ear cookies, are a French pastry that is shaped like a palm leaf or an elephant’s ear. It is made from puff pastry dough that is rolled out, coated with sugar, and then folded and rolled again to create multiple layers. The pastry is then sliced crosswise into individual pieces, resembling palm leaves or elephant ears, and baked until golden and crispy.

Palmiers are typically sweet and have a caramelized flavor due to the sugar coating that caramelizes during baking. They are often enjoyed as a snack or served as a dessert. Palmiers can be found in many bakeries and pastry shops around the world and are also quite simple to make at home.

Palmiers may be enjoyed by themselves but in this recipe, we combine them with custard to create an interesting and very enjoyable dessert recipe.

  • 1 Loaf Pan

Ingredients

  • 2 Cups Custard Homemade is always nicer
  • 350 gr Palmier

Instructions

  • Line a loaf pan with clingwrap to allow easy extraction of the finished dessert loaf.
  • Add a generous layer of custard to the bottom of the pan.
  • Next add a layer of Palmier.
  • Continue the above till the custard and palmiers are finished (leave 1 palmier for crumbling).
  • Cover the top of the pan with clingwrap and place in the fridge to set for 2 hours.
  • Once set, remove from the pan and remove the cling wrap gently.
  • Crumble the remaining palmier and sprinkle the top of the loaf for decoration,
  • Slice and enjoy!
