A quick and asy recipe for my Russian recipe that gives light and fluffy pancakes.

  • Mixing bowl

Ingredients

  • 250 ml Amasi (alternative buttermilk or kefir)
  • 1 lrg Egg
  • 1 dash Vanilla Essence
  • 2 tbsp Sugar
  • 1 pinch Salt
  • 250 gr flour
  • ½ tsp Sodium Bicarbonate (baking Soda)

  • Combine the amasi, egg, and vanilla essence and mix well.
  • Add sugar and a pinch of salt. Mix well.
  • Mix the bicarb into your flour and then add slowly to the wet mixture. Mix well.
  • Your batter should be thick.
  • Allow mixture to rest for 10 minutes.
  • Heat a frying pan on a medium heat. Oil well.
  • Add dollops of crumpet mixture – I measure approximately a tablespoon for each crumpet.
  • Fry until golden brown on both sides – should take about 2 minutes per side.
  • Remove from pan and allow to cool. I normally let them stand on paper towel to absorb any extra oil.
  • Serve with butter, jam, or honey.
