A delicious cake with fresh baked apple and optional raisins.
Equipment
- Loaf Pan
- Mixing machine
Ingredients
- 2 Apples cored and sliced
- 3 large Eggs
- 150 gr Sugar (5.3 oz)
- 1 tsp Vanilla Extract
- 125 gr Buttermilk (½ cup)
- 2 tsp Vegetable oil
- 230 gr Flour (8.11 oz)
- 1 tsp Baking Powder
- 1 pinch Salt
- 1 tbsp Lemon Juice
- 125 gr Raisins (½ cup) (Optional)
- 1 tbsp Cinnamon sugar for dusting

Instructions
- Add eggs and sugar to mixing bowl and mix thoroughly
- Add oil, vanilla essence, and buttermilk and continue mixing
- Combine flour, baking powder, and salt together
- Mix the above wet and dry ingredients together and mix well.
- Add Raisins to the mixture (optional)
- Pour the mixture into a loaf pan
- Core and slice the apples
- Push the slices into the mixture so that ¾ the slice is submerged
- Sprinkle with cinnamon sugar
- Bake in a preheated oven at 180 deg C (356 f) for 50 to 55 minutes

Serve with tea and coffee as a cake or alternatively serve as a dessert with hot custard. The raisins and cinnamon sugar are totally optional but do create a unique taste and add to the visual appeal of the apple pie cake.
