Ingredients

  • 2 Large Eggs
  • 150 gr Fine sugar
  • 160 gr All-purpose flour
  • ½ tsp Baking Powder
  • 150 gr Melted Butter
  • 1 each Zest from 1 lemon
  • ½ tsp Vanilla essence

Instructions

  • Whisk the eggs and sugar together until the mixture is pale
  • Add small portions of flour and sugar (alternate) at a time and mix to achieve a smooth and airy batter.
  • Add the baking powder and lemon zest and store in a refrigerator for 1 hour.
  • Pre-heat your oven to 200°C
  • Butter your madeleine baking tray and dust with flour to aid in the removal of the baked madeleines.
  • Fill each cavity of the baking tray with a spoon of batter.
  • Bake for 10 minutes at 200°C
  • Remove and allow to cool on a rack.
  • Sprinkle with icing sugar prior to serving
