  • 1 Pack Lady finger biscuits
  • 4 lrg Egg yolks
  • 150 gr Sugar
  • 2 tbsp Cocoa Powder
  • 250 ml Espresso Coffee
  • 250 gr Mascarpone cheese

  • Make a minimum of a full cup of strong espresso coffee and allow it to cool to room temperature.
  • In a mixing bowl add the 4 egg yolks. and the sugar. Using a hand mixer beat well until the mixture is thick.
  • Add the mascarpone and beat until fluffy and smooth to complete the cream.
  • Coat the bottom of your dessert dish with cream.
  • Add a layer of lady-finger biscuits that have been dipped into the espresso coffee.
  • Coat the biscuits with cream and then add a 2nd layer of espresso-soaked biscuits
  • Add the rest of the cream to cover the layer of lady-finger biscuits
  • Cover and place in the fridge overnight to set completely.
  • Sprinkle with a generous covering of cocoa powder.
  • Cut into squares and serve as a dessert.
